With Cardamom spice, confected yellow peaches and bergamot and with lime pith, the lees influence gives aromas of almond butter, banana cream and hints of vanilla pod. The acidity balances the richer flavours, giving a fresh palate with confit lemon and tart tangerine with lightly toasted almonds on the finish.
The fruit is grown in an elevated site in the Yarra Valley. Granitic soil, sustainably managed, NE facing aspect twenty four year-old vines, and a blend of two clones - Mendoza and Gin Gin.
We harvested early to ensure primary fruit flavours and exceptional natural acidity. Minimal handling and extended time in tarasaud special chardonnay barrels. Two oak formats were utilised; 700 litre and 225 litre with no malolactic fermentation.
This wine is drinking now and will continue to cellar for 10+ years.
