Tasting Notes:

 

Soft black pepper spice is mingled with black and blue plum fruits, hints of sweet blackberry and baked boysenberry. The nose is aromatic with fresh violets and subtle angelica root. The palate is velvety and supple with structured, fine tannins. 

 

Viticulture

 

Grown on ancient volcanic soil in Heathcote. Biodynamic and organic practices are part of our philosophy to ensure purity. Twenty - five-year-old Shiraz - A blend of BVRC and PT23 clone. 

 

Winemaking

 

25-30% hand picked for whole bunch fermentation. Picked with a pH between 3.4-3.5. Fermented on skins, pressed off into a combination of %20 new french oak, 5-7% new american oak and the balance 3-5 year old french oak. Minimal sulphur and handling.
