Still Moon invites guests to indulge in an unforgettable Spring Wine Dinner on Saturday,
November 15, 2025, within the elegant surrounds of the Mount William Station historic homestead in Willaura.
The evening offers a five-course menu that celebrates the essence of spring. Each dish is paired with boutique wines reflecting regional craftsmanship and terroir.
The evening begins at 5:30 p.m. with sparkling rosé and canapés, followed by a five-course dinner from 6:30 p.m.
Executive Chef Dean Sibthorp will introduce each course, while Still Moon’s co-founder
presents the matching wines and their stories. The dinner is priced at $150 per person.
Chef Sibthorp’s spring-inspired menu showcases the Grampians’ finest hyper-seasonal produce and Mount William’s own gardens, with dishes such as Pumpkin & Farm Rosemary Soufflé, Honey-Glazed Pork Tenderloin, and a deconstructed Eton Mess.
Each is designed to complement Still Moon’s line-up:
‘Charmaine’ Sparkling Grenache Rosé, Cortese, Chardonnay, Pinot Noir, and ‘Stewart’ Syrah.
Guests can extend their evening with exclusive accommodation packages:
Homestead Master Ensuite — $450 per night (includes breakfast for two)
Homestead Standard Ensuite — $350 per night (includes breakfast for two)
Shearers’ Quarters — $200 per night (includes breakfast for two at the Homestead)
